Mac-n-cheeze time!!!

Whenever my husband has to work late, which is usually once a week, my daughter and I have movie night while we eat dinner.  And more often than not, that dinner includes mac-n-cheeze.  No, not the box kind, the real deal.  Well….the real vegan deal that is.  I have had many vegan mac-n-cheeze recipes over the years but I have never had one so ultimately satisfying and (shhh…healthy) as this.  Not to mention one with the consistency and flavor similarity so close to it’s dairy counterpart.  I LOOOOOOVE this recipe!!!!  It is so easy to make and it uses real veggies like carrots and potatoes.  So how can you not serve it up willingly to your kids whenever they (or you) are craving it?  I have had several non vegans ask for it time and again.  Dare I say I’m obsessed with it???   This recipe makes a big portion of delicious cheeze sauce and I always have plenty left over to use as queso for nachos, enchiladas, burritos or  what have you.  Last week I was caught dipping my broccoli in it.  I love to add a little vegan ground “meat” and salsa for a great party dip as well.  Oh the possibilities! Unlike other vegan cheeze sauce recipes it reheats perfectly back to its original version.  Ok, I will not make you wait any longer.

Here it is:

Ingredients:

2 C potatoes, diced (I like to use Yukon gold potatoes and you don’t have to peel them; any other variety peel first)

1 C carrots, diced (don’t worry about how you dice or chop the carrots and potatoes as long as they are of similar size; and the smaller you cut the faster they will cook)

½ C water (you can use the water you boiled them in if you have enough left)

½ C nutritional yeast, vegan fairy dust, nooch, or yellow sprinkles as we call it in my house

1/3 C of avocado oil, olive oil, or vegan butter

1 Tbsp. lemon juice

2 tsp. pink Himalayan or sea salt (sounds like a lot but it’s a lot of sauce) you can start with less add to your taste

¼ tsp. onion powder

¼ tsp. garlic powder

A couple dashes of hot sauce or cayenne ( I omit this when making for kids)

Instructions:

Cover potatoes and carrots in just enough water to cover and boil until soft.

Then pour into blender along with all other ingredients and blend on high until smooth.

That’s it!!!
